Italian Mac & Cheese

Combine sauce, tomatoes, olive oil and spices. Let simmer for 20-30 min.  Cook sausage and pasta while sauce simmers.  Reduce heat to low. Add sausage, pasta and cheese. Stir frequently until cheese melts and pasta is coated.


1 lb. hot italian sausage, cooked and crumbled
1/4 lb. Velveeta, cubed
1 clove garlic, minced
1/2 tsp oregano
1/2 tsp dried basil
1 bay leaf
1 can diced tomatoes
1 can tomato sauce
1/4 C. olive oil
10 oz. penne pasta or macaroni
