Italian Mac & Cheese

Ingredients
  

  • 1 lb. hot Italian sausage cooked and crumbled
  • 1/4 lb. Velveeta cubed
  • 1 clove garlic minced
  • 1/2 tsp oregano
  • 1/2 tsp dried basil
  • 1 bay leaf
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1/4 C. olive oil
  • 10 oz. penne pasta or macaroni

Instructions
 

  • Combine sauce, tomatoes, olive oil and spices. Let simmer for 20-30 min.  Cook sausage and pasta while sauce simmers.  Reduce heat to low. Add sausage, pasta and cheese. Stir frequently until cheese melts and pasta is coated.
