Deluxe Cheesecake

Combine crumbs and butter, mix well.  Press mixture into springform pan.  Beat together cream  cheese and milk.  Beat eggs in one at a time, beating well after each addition.  Gradually beat in sugar, vanilla, and salt, beating well.  Pour mixture into crust.  Bake at 350 degrees for one hour and 10 minutes or until set.  Remove from oven,  cool 10 minutes.  For topping, combine sour cream, sugar and vanilla.  Spread over top of cheesecake.  Bake at 475 degrees for 5 minutes.  Cool and refrigerate overnight.


This recipe produces a sumptuously rich, thick cheesecake that is magnificent with strawberries, raspberries, or chocolate.  I have also varied it using limes for a key-lime cheesecake.  It tastes best not right out of the oven, but after it sits overnight.
